Introducing Amherst Wines : Small batch winery from the Pyrenees
Amherst Winery was established in 1989 with the planting of 2.2 hectares of shiraz in the Pyrenees wine region, western Victoria, about 150 km northwest of Melbourne. As well as getting fruit from their own vineyard the team at Amherst work with some very dedicated local grape growers who supply the winery premium quality grapes from their low yielding vineyards. The wines are made in small batches on site using traditional winemaking methods. Across the red and white varieties the wines are elegant, fruit driven styles that are a reflection of the time and place from which they come.
The land at Amherst, an old gold field, has been in the family since the 1970’s. Now owned and operated by second generation vigneron, Luke Jones, who carries on his parents’ passion for high quality, small batch winemaking. As a teenager Luke helped plant the vineyard and has been involved in almost every vintage since that time. After 15 years in the wine industry in Melbourne Luke took over the winemaking duties in 2008. Since the first commercial release of Shiraz in 1995, Amherst has gained a reputation for elegant, cool climate, hand crafted wines that have wowed critics and wine lovers alike
At Provenir, we understand the importance of enhancing your dining experience with the perfect wine pairing. Here are some dish ideas, each harmonising with a different variety of wine:
1. Red Wine Pairing:
For that silky red wine you’ll be unwrapping with your Provenir order, we recommend pairing it alongside our flavourful Scotch Fillet steak. The Hanger steak, known for its robust flavour and tender texture, pairs beautifully with the complex notes of a rich Shiraz or Sangiovese. Season your Scotch Fillet steak with a simple blend of salt, pepper, and a touch of garlic flakes before grilling or pan-searing it to perfection. Serve it alongside roasted vegetables drizzled with balsamic glaze for an elegant and satisfying meal.

2. White Wine Pairing:
Delve into the realm of white wines with a refreshing glass alongside our tender eye fillet. The delicate texture of the eye fillet dances effortlessly with the crisp acidity and citrus notes of an Australian Chardonnay or Pinot Grigio. Opt for a light seasoning or marinade to allow the natural flavours of the beef to shine through. Serve your cooked fillet with a vibrant salad of mixed greens, cherry tomatoes, and a zesty vinaigrette for a burst of freshness.
