This dish was created in the Ducks many moons ago, and it’s been a crowd favourite ever since its inception. A lovely caramelised flavour comes from the coffee and spice, and the meat is fall to pieces tender as we slow cook it to perfection.

Great with burgers, potato salad and pickled jalapeños, can also be pressed into a patty and hard fried in a skillet.

The beef briskets we source from Provenir have a nice marbling content, and actually very easy to work with as I find them more tender than a regular brisket – I’m sure this has something to do with the on-farm processing, and the low stress environment where these guys are raised. We also marinated the brisket overnight, so we get an amazing infusion of flavour from the rub before cooking… It’s these little things that make this brisket a winner!
