Hi Guys
I recently tried your Beef Offal sausages while liked them and love the idea of the nutritional benefits I was unable to convince the rest of the family to try them.
At present we regularly have a black pudding from Gotzinger and I thought to myself that a combination of your Beef offal sausage and Gotzingers Black pudding flavours would be perfect and wondered if you had considered something like that for us less acclimatised nose to tail carnivores.

Too strong offal flavour / texture. I provided the team with some feedback as I love what they are trying to do – I love the health benefits of offal and nose to tail eating. I am someone who loves pancreas, likes tongue and heart and can tolerate liver cooked medium rare (but don’t love it) or made into pate.
With this background, I personally don’t think the ratios in the offal sausages are right in terms of taste. When I cook the sausages medium rare, they are (just) okay, but if you cook them medium / well (like is usually done with sausages) they are pretty unappetizing, to the point I can only eat them if they are drowned in other things like bacon. I think the 52% beef muscle / fat ratio with the rest offal needs to be closer to 70-80% with 20-30% offal for a better tasting sausage. Hopefully the recipe gets tweaked then I will buy some more!
