But dont confuse Provenir’s process with the traditional “farm butcher” who processing animals solely for the farmer’s consumption. Minerva and our processing guidelines must meet strict quality and regulatory guidelines to be able to sell it commercially – in fact this simple but innovative process required us to change the laws regarding meat processing in Victoria. And our commitment to excellence doesn’t stop there. Minerva’s on-farm processing not only benefits the animals but also supports our hard working farmer partners. I am so very pleased Provenir exists. In 1974, at the X111 International Grasslands Congress in Moscow I saw a poster display by an English company building processing vehicles which presume were similar to yours. Ever since, I’ve thought that was a brilliant idea.
I hope you have plans for expanding to Tasmania. We have only two major processors: JBS (apparently owned by South American criminals) and Greenham at Smithton, with a smaller processor at Cressy in the northern midlands. There are one or two local processors, but the only one in the Huon Valley south of Hobart is closed and on the market. It has had a very inconsistent history, so perhaps it will never re-open. As a consequence most of our animals – and particularly those in the south of the state, have to travel long distances before they face the cruelty of dieing in a noisy and smelly environment. As a thinking farmer, that offends me.
What are the chances of a Tasmanian Provenir? We (and our farm animals) need you !

I’d like to second John’s request- Tasmania would be a huge market for you, and with very few over-worked mobile butchers, you’d certainly be busy!
Thanks for your comment David – we would love to head to Tassie – though please note that there is a significant difference between what we do and the services mobile butchers provide. The key difference is that our operation allows us to sell on farm processed animals commercially where as mobile butchers arent allowed to (it is only for the farmers personal consumption). This key difference has very large regulatory and compliance implications that we have to meet everyday of operation. Due to these necessary regulatory requirements, it means that we need to operate at a larger scale than what the home butchers can. Having said that – Tasmania undoubtedly produces some of the best beef in the water. We look forward to have Provenir operate there sometime soon.
