Japanese Glazed Meatballs With Pickled Vegetables

Ingredients
- 600 g Lean beef mince (makes 24)
- 1 tbsp Soy sauce
- 1 clove Garlic (crushed)
- 1 tsp Ginger (finely grated)
- ¼ cup Panko crumbs
- 270 g Soba noodles
Glaze
- ¼ cup Sweet soy
- 2 tbsp Soy sauce
- ¼ cup Mirin
- 1 tsp Sesame oil
Pickled vegetables
- ½ cup Rice wine vinegar
- 4 sprigs Rosemary
- 4 Pink radish (washed and sliced)
- 1 Lebanese cucumber (roughly chopped on the diagonal)
- 1 Bok choy (quartered lengthways)
- 1 long Red chilli (slit in half lengthways but kept whole at the stem)
Instructions
- Place beef mince, soy, garlic, ginger and panko crumbs in a large bowl and mix until combined. Roll into 24 meatballs, about 1 tablespoon each. Soak bamboo skewers in water for 10 minutes, drain and closely thread 3 meatballs onto each skewer.
- Place chopped vegetables in a large heatproof bowl. Place rice vinegar, a pinch of salt flakes and 2 sprigs rosemary in a small saucepan and bring to a simmer, turn off heat and pour vinegar over vegetables, turn to coat and cover with a lid. Leave to pickle for 5-10 minutes for crunchy pickles. Drain before serving.
- Combine glaze ingredients in a bowl and use remaining 2 rosemary sprigs for brushing glaze onto meatballs after cooking.
- Drizzle meatballs with a little oil or spray with oil spray and then place on a preheated BBQ on medium to high heat, cover and cook for 5 minutes then turn over and cook for another 5 minutes. Brush meatballs with glaze using the rosemary skewers while on the BBQ, and brush with extra glaze to serve.
- Cook soba noodles according to packet directions, drain. Serve skewers with pickled vegetables and soba noodles.
Notes
- When turning meatballs on the BBQ, use a palette knife or metal spatula to help you turn them as they have a tendency to stick, and the bamboo skewers get hot.
- Meatballs can be made ahead and frozen. Bake from frozen at 180C fan forced for 15-20 minutes. Glaze in final 5 minutes.
- Try with lamb or veal mince.

- 500 g Beef mince
- 1 Vegetable oil
- 2 cloves Garlic (thinly sliced)
- 2 tsp Ginger (finely grated)
- ¼ cup Teriyaki Marinade
- 200 g Sugar snap peas
- 1 Yellow capsicum (cut into strips)
- Jasmin rice (to serve)
- Green onions (sliced)
- 2 tbsp Sesame seeds (to garnish)
- 80 g Baby spinach (to serve)
Instructions
- Heat oil in a pan, add garlic and ginger, cook for 20 seconds. Add the beef mince and cook, breaking it up with the back of a wooden spoon, for 5 minutes until browned.
- Reduce heat and add teriyaki marinade. Add the sugar snap peas, capsicum and stir to mix evenly. Simmer, uncovered, for 2-3 minutes.
- Serve on rice garnished with green onions, sesame seeds and a side of baby spinach leaves.

- 1 small Red onion (thinly sliced)
- 3 cm Ginger (peeled, thinly sliced)

- 1 ½ tbsp Fish Sauce
- ¼ cup Sweet Chilli Sauce
- 1 Lime juice + wedges (to serve)
- 200 g Rice noodles
- Mint leaves, torn, sliced fresh chilli (optional) (to serve)
Instructions
- Heat oil in a large wok or non-stick frying pan over medium-high heat. Add mince and cook for 3-4 minutes or until browned. Add onion and ginger and cook for 1-2 minutes. Add vegetables and cook for 3-4 minutes. Add sauces and lime juice, season and toss to coat.
- Prepare noodles according to packet instructions. Drain.
- Divide noodles between bowls and top with mince mixture. Sprinkle with mint and chilli, if desired. Serve with lime wedges.
Notes
- Beef strips would also work well in this recipe.
- Any type of Asian noodles or rice would be a delicious base.
- If you have extra time you can prepare your own vegetables for stir-fry. Choose a stir-fry mix with onion and you can omit the onion from this recipe.
- Add some lemongrass for extra flavour – thinly sliced fresh lemongrass or lemongrass paste.
