BEEF RIB EYE WITH SPICY QUINOA AND BEAN SALAD

Ingredients
- 4 650g Grass-fed beef rib eye steak
- 1 tablespoon Olive oil (plus extra to serve)
Mole sauce
- 2 tablespoons Adobo in chipotle sauce
- 1 Banana (chopped)
- ¼ teaspoon Garam masala
- 1 teaspoon Cocoa
- 1 tablespoon Lime juice
Quinoa salad
- ⅔ cup Quinoa
- 1 400g can Kidney beans
- 250 g Grape tomatoes (halved)
- 50 g Rocket leaves
- Parsley leaves (to serve)
Instructions
- Place beef rib eye cutlets on a plate and brush with oil. Season with pepper. BBQ beef rib eye cutlet for 3-4 minutes on each side until medium rare or until cooked to your liking.
- Place quinoa in a fine sieve and rinse under cold water, then tip into a medium saucepan, add 1 1/3 cups water and bring to the boil, simmer and cover until grains have opened up, 15 minutes. Rest for 10 minutes, and fluff grains with a fork.
- Place adobo in chipotle sauce, banana, cocoa, garam masala and lime juice in a small food processor or blender and process until smooth. Season to taste.
- Combine the quinoa with the beans, tomatoes and rocket. Drizzle with a little lime juice and olive oil. Serve beef with the quinoa salad and extra mole sauce spooned over.

- 800 g Rump steak (diced into 2–3 cm pieces)
- 2 tbsp Olive oil
- 2 cloves Garlic (crushed)
- ¼ cup Lemon juice
- 2 tbsp Moroccan spice mix
- Salt & pepper
Red Cabbage Salad
- 1 small Red cabbage (shredded)
- ½ Red onion (thinly sliced)
- 200 g Cherry tomatoes (quartered)
- 2 Cucumbers (sliced)
- ½ cup Fresh mint leaves
- 2 tbsp Olive oil
- 1 tbsp Apple cider vinegar
- Lebanese bread, hummus, baba ganoush and lime wedges (to serve)
Instructions
- Combine diced steak and marinade ingredients in a large bowl or zip-top bag. Leave to marinate for 30 mins.
- To make the salad, whisk together oil, vinegar, and a pinch of salt and pepper in another large bowl. Add cabbage and onion and stir to coat well with dressing. Toss through tomatoes, cucumber, and mint just before serving.
- Thread marinated meat onto skewers and sprinkle with a bit of salt and pepper. Pre-heat BBQ or a large heavy-based skillet to medium-high.
- Cook skewers 4–5 mins, turning to sear all sides. Transfer to a clean plate and cover loosely with foil and rest for 5 mins.
- Serve skewers with warmed Lebanese bread, dips, and cabbage salad.

- 600 g Rump steak (trimmed, cut into thin strips)
- Olive oil spray
- 1 large Eggplant (halved lengthways, thinly sliced)
- 1 large Zucchini (thinly sliced longways)
- 1 Red capsicum (cut into 2cm strips)
- 1 Red onion (cut in half, then thinly sliced)
- ½ cup Kalamata olives (pitted and roughly torn in half)
- 100 g Feta cheese
- 1 tbsp Olive oil
- 100 g Rocket leaves
- 1 small loaf Fresh wholegrain bread and mint leaves (to serve)
Instructions
- To make the dressing, whisk together ingredients in a small bowl with sea salt and black pepper.
- Heat a BBQ, grill or fry pan to medium high heat. Spray the vegetables with olive oil and season with salt and pepper. Pan fry in batches until golden and tender. Once cooked, set aside on a plate to cool.
- To cook the beef strips, season with a pinch of salt and pepper. Heat oil in a large non-stick frying pan or BBQ over high heat. Add the beef in two or three batches to ensure the pan stays at a high heat and fries the beef. This should only take around 2 minutes per batch. Place the beef on a warm plate once cooked.
- To serve, use a large platter and cover the base with a bed of rocket. Scatter over the char-grilled vegetables and beef strips, and then drizzle over the dressing. Finish with the torn olives, a scatter of crumbled feta and mint leaves.
