Spiced beef and rice pilaf
This Persian-inspired recipe will tantalise your taste buds with its mix of spices and the addition of dried fruits and nuts.
It’s also super easy to cook and makes an ideal one-pot meal for convenience.
Spiced beef & Rice Pilaf
Time
- Preparation: 5 min
- Cooking: 25 min
- Ready in: 30 min
Ingredients
- 1 pack Premium Grass-Fed Minced Beef
- 3 tablespoon Olive oil
- 1 Onion (finely chopped)
- 3 cloves Garlic (minced)
- 1 teaspoon Cinnamon (ground)
- 1 teaspoon Mixed spice
- 1 teaspoon Turmeric (ground)
- 1/2 teaspoon Cardamom (ground)
- 1/4 teaspoon Nutmeg (ground)
- 2.5 cups Basmati rice
- 4 cups Beef stock (Use Provenir beef broth with 2 cups of water)
- 200 grams Frozen peas
- 100 grams Toasted almonds
- 100 grams Raisins
- 50 grams Barberries
- 1/2 bunch Fresh parsley (roughly chopped)
Instructions
- Place oil, onion, and garlic into a large pan on medium heat (use a pan that is nice and wide, moderately deep, and has a tight-fitting lid). Cook and stir for 5 minutes until softened.
- Turn the heat up to high, add beef, and cook, stirring frequently to break up the mince until the beef is starting to brown. Add the spices and cook for a further 2 minutes till the spices are fragrant.
- Add the rice and stir for a minute to evenly distribute the ingredients and get all the rice grains nicely coated in spices and oil, then add the stock. Bring to a simmer, then turn down the heat to the lowest possible setting and place the lid on the pot. Leave covered for 10 minutes.
- Take the lid off, add peas, almonds, raisins, and barberries (if using), and scatter them onto the surface of the rice. Put the lid back on and let it cook for 5 more minutes.
- Take the lid off, and use a fork to fluff up the rice. Have a taste and adjust the seasoning if needed. Top with the chopped parsley & serve right away.
Mexican beef barbecue pizza
This recipe is a glorious fusion of Italian and Mexican cuisine, bringing them together in a riot of taste and colour.

Mexican Beef Barbecue Pizza

- Preparation: 10 min
- Cooking: 15 min

Ingredients
- 1 pack Premium Grass-Fed Minced Beef
- 2 tablespoons Olive oil
- 40 grams Fajita spice mix
- 2 30cm Pizza bases (fresh)
- 453 grams Chunky tomato salsa
- 1½ cups Pizza cheese (grated)
- Sliced avocado, coriander leaves and lime wedges, to serve
Instructions
- Preheat the barbecue to 220ºC (the burners should be set at high). Place racks inside 2 large baking trays. Place in the centre of the barbecue, side by side, to preheat.
- Place mince in a bowl and mix in oil and fajita spice mix. Heat a large pan, ensure it is moderately hot. Crumble in half of the mince. Brown the mince, breaking up any lumps with a fork. Remove first batch, reheat pan, cook remaining mince, and then remove it.
- Spread pizza bases evenly with salsa. Top with beef mince. Sprinkle with cheese. Place on preheated trays in barbecue. Lower hood. Barbecue for 12-15 minutes or until bases are crisp, cheese melts, and is golden. Serve beef pizza sliced and topped with avocado, coriander and lime wedges.

Home Made Beef Mince Skewer
- 1 tablespoon Mixed herbs, fresh or dried
- 1/2 teaspoon Chilli flakes (optional)
- Generous pinch of salt
- 1 Wooden or metal skewers
Pita Bread
- 1/2 cup Arrowroot/ tapioca flour
- 1/2 cup Almond meal
- 1/4 cup Coconut cream
- 1/4 cup Water (plus extra if necessary)
- Generous pinch of salt
- 1 tablespoon Coconut oil or butter for frying
Avocado Pesto
- 1 large Avocado (mashed)
- 2 tablespoons Pesto
- Juice of 1 lemon
Salsa
- 1 Tomato (finely diced)
- 1/2 Lebanese cucumber (finely diced)
- 1/4 Red onion (finely diced)
- 1 tablespoon Flat-leaf parsley (Fresh) (finely diced)
Instructions
- Heat a large non-stick fry pan over medium to high heat and melt your cooking oil.
- Start by making your pita bread. Whisk the listed ingredients in a bowl and season well with salt. If it is too thick, simply add a little extra water until it’s easy to pour. Cooking in batches, evenly divide your batter to make 4 individual pita bread wraps. Cooking on the first side until golden brown and perfectly crispy, and stable enough to flip. Once cooked on both sides repeat with the remaining batter and set them aside.
- For your homemade beef mince skewers, combine the ingredients in a bowl, and using your hands, mix the meat with the herbs and spices until well combined. Still using your hands, moguls the meat in four even portions around your four prepared skewers. Using the same pan you made the pita, simply fry your beef skewers until cooked through, lovely and golden brown on the outside. Set aside and get into the fresh elements of your plate.
- For the avocado smash, combine your avocado, pesto, and lemon juice in a bowl until well combined. For the salsa, simply mix the ingredients in a bowl and dress with some extra lemon juice.
- Serve your pita bread topped with the avocado pesto, beef skewers, and a generous sprinkling of fresh salsa.
